Banana Ice Cream Pie
I have always loved Banana Cream Pie since the day I tasted it way back when I was in the states. I was not used to pies then and am still not used to them. Here in Manila, the closest I have had to a real pie were the time I actually made an apple pie at home, and the other when we ate at Bag of Beans, which had the best apple-pie I have tried. You would notice I mentioned apples not because they were my favorite but they were of my hubby’s. Go figure.
Since its been extremely hot the past couple of days, and add to that my craving for banana cream pie, I decided to be creative and make an alternative from what I already had in our pantry. I wanted something filled with bananas, smothered in cream but cold and sweet at the same time. I had the perfect picture in mind – instead of just plain custard smothered bananas, I was craving for vanilla ice cream smothered bananas. It was too easy and that I did. Look at that picture of fine vanilla ice cream filled with bananas dipped covered in caramel sauce. Sweet!
Ingredients:
1 container Nestle Heaven Vanilla Secret
4 bananas sliced thinly
2 tbsp caramel sauce
1/2 cup cream
1/2 cup semisweet chocolate melted
1 cup crushed graham mixed with melted butter for the crust.
Procedure: Using 2 medium loaf pans or plastic containers, line the bottom with the crushed graham for the base. In a separate bowl, combine ice cream, bananas, caramel sauce and cream. Pour into the containers. Drizzle with melted chocolate making a swirl. Freeze for about 1 hour and you have got a cold and delectable dessert that is way above the simply monotonous vanilla ice cream or the usual banana cream pie. Yummy!

Erin – Haha. But yeah, from all those, it was only the ice cream I had to buy from the grocery. Everything else I keep stock and is a regular item on my shopping list. I guess when you have 2 hungry kids and 1 demanding hubby you learn how to be prepared for anything.
