Creamy Caramel Cheesecake
Its time for recipe sharing once again. While uploading some pictures into my flickr account, I noticed that I still have some pictures for posts that have remained in draft for quite some time now. It actually is perfect timing for me since some people have started asking me again about a particular cheesecake that I had let them try once a few months ago. So to keep from breaking my promise about recipe sharing, here is how I created such a yummy caramel cheesecake.
Ingredients:
Crust
2 cups graham crackers (crushed)
1/2 tsp sugar
1 stick butter (melted)
Filling
2 8oz cream cheese
3 large eggs
1 cup sugar
3/4 cup heavy cream
2 (1/2 cup caramel sauce)
1 tbsp lemon juice
dash of vanilla extract
Procedures:
Preheat oven to 350 degrees F.
To make the crust, combine all the ingredients in a bowl and mix with a fork until evenly moistened. Coat the bottom of an 8-inch springform pan with this mixture and refrigerate for 15 minutes.
Next, beat the cream cheese on low speed for 1 minute. Add in the eggs one at a time. Gradually add the sugar. Continue beating while you add the heavy cream, half cup of caramel sauce, lemon juice and vanilla extract.
Pour into springform pan until about halfway full. Drizzle in the other half of the caramel sauce right in the middle. Pour in the rest of the cream cheese mixture.
Bake in a water bath for 1 hour and 10 minutes.
Cool overnight.

yum! love cheesecake… and this looks sooo good, yet simple to make. I sometimes throw in ground almonds in my crust. It gives a different texture.

Jescel – Where did I hear that before? I read somewhere about using digestives (its biscuits i think). I probably would try something like walnut too.
The cheesecake is for me, the caramel is for my husband. Put them together and it’s a perfect pairing!
